Gluten Free Chocolate Chip Banana Bread

Who doesn’t love the smell of banana bread wafting through the kitchen? This is a recipe I pull out anytime we have bananas that are too ripe.

It’s made with a handful of pantry staples, and the result is a perfectly sweet loaf that’s soft enough to melt in your mouth but sturdy enough to hold up to a generous smear of butter (or your favorite spread).

Eat it for dessert. Eat it for breakfast. Or grab a slice as a quick snack. I won’t tell.

Gather Your Ingredients

  • Bananas – these should be very very ripe. The brown, ugly ones do the trick!
  • Flour – I use one of my favorite gluten-free flour blends; Bob Red Mill’s 1-1 Gluten Free Baking Flour. You don’t need to add xantham gum because it’s already in the mix.
  • Butter – I almost always use salted butter because I think it adds that certain something. But feel free to use unsalted.
  • Sugar – just a wee bit of sugar for sweetness, but not too much since we are adding chocolate chips.
  • Chocolate Chips – I use the semi-sweet mini morsels.
  • Vanilla Extract

Gluten Free Chocolate Chip Banana Bread

You will never guess that this moist and delicious banana bread is gluten free!

Ingredients
  

  • ½ cup butter softened, I use salted
  • ¼ cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 large ripe bananas or 3 small ripe bananas
  • cups Gluten Free 1-1 Flour
  • 1 tsp baking soda
  • ¼ cup chocolate chips

Instructions
 

  • Preheat the oven to 350°. Grease a loaf pan with some of the butter.
  • In a large bowl, mix the butter and sugar. Add in the eggs one at a time and mix until well combined. Add the vanilla and the bananas and mash the bananas with a fork.
  • In a separate bowl, whisk together the flour and baking soda.
  • Add dry ingredients to the wet ingredients and mix. Add in chocolate chips.
  • Pour batter into greased loaf pan and bake for 45 minutes until golden brown on top.
