Fluffy Gluten Free Waffles
These gluten free waffles are fluffy, crispy, and perfect for breakfast or brunch. Easy to make and freezer-friendly, your family will thank you.
Last week we flipped gluten free pancakes, this week we’re onto gluten free waffles! Just because gluten isn’t your friend doesn’t mean you have to break up with fluffy, golden waffles for breakfast. I promise, these gluten-free waffles won’t taste like cardboard.
This recipe uses Bob’s Red Mill 1:1 gluten-free baking flour and just a few simple pantry staples. It’s easy to double for a hungry crowd (or ravenous kids). Bonus: you can stash these waffles in your fridge or freezer and just pop a couple into the toaster whenever waffle cravings strike.

Just FYI, these waffles aren’t overly sweet—we let the powdered sugar and maple syrup do that job. But if you like your waffles more sweet, by all means toss in extra sugar (more on that in the recipe card).
My favorite part is letting the waffle maker do all the heavy lifting. It even tells you when the waffles are ready! No guessing games. I love opening it up to perfectly crisp, golden waffles –yum!

Gather your Ingredients
- Eggs
- Flour (Bob’s Red Mill 1:1 gluten-free baking flour with binder like xanthan gum)
- Milk
- Baking Powder
- Sugar
- Salt
- Vanilla
How to Make Gluten-Free Waffles

- Mix all dry ingredients together (flour, baking powder, salt, sugar).
- In another bowl, whisk together wet ingredients (milk, eggs, vanilla).
- Combine wet and dry ingredients until just mixed. Don’t go crazy stirring.
- Let batter chill out for 5-10 minutes while your waffle maker heats up.
- Lightly spray waffle iron with non-stick spray.
- Pour about ¼ cup of batter (give or take) onto the waffle iron, close the lid, and let the magic happen.
- Once your waffle maker gives the green light (or blue, in my case), gently remove waffles (I like using a fork) and enjoy.
Recipe Tidbits
I only use about one tablespoon of sugar because toppings like maple syrup bring plenty of sweetness. If your sweet tooth demands more, add another tablespoon—but be warned, syrup and toppings can easily push you into sugar coma territory.
Variations and Substitutions
Throw in ½ cup of chocolate chips, blueberries, or chopped nuts for extra yum. Don’t skimp on toppings—we go for powdered sugar and high-quality maple syrup around here, but bananas, whipped cream, chocolate sauce, berries, and nuts are also winners.

Need dairy-free waffles? Swap regular milk for almond milk (my personal fave) and slather on dairy-free butter like Country Crock Plant Butter. Vegans, go for egg replacers like ground flaxseed mixed with water.
Storage / Make Ahead Tips
Planning ahead? Keep cooked waffles warm on a baking rack in the oven on low (like 250 degrees) until everyone drags themselves to the table. Why the wire rack? It keeps air circulating – no one likes a soggy bottom waffle.

Store extras in an airtight container in the fridge for up to three days or in the freezer for a couple of months. Make sure waffles are completely cool before freezing and use a freezer safe ziploc bag to store them with parchment between slices. Revive frozen waffles by popping them in the toaster for a crisp bite or microwave if you prefer them soft and fluffy again.

Dry Ingredients
- 1 cup gluten free flour with xantham gum, I use Bob Red Mill's 1:1 Baking Flour
- 1 tbsp baking powder
- 1 tbsp sugar, add extra tbsp more if you have a sweet tooth!
- 1 pinch salt, ¼ teaspoon
Wet Ingredients
- 1 egg
- 1 cup of milk, regular, almond, etc
- 1 tsp vanilla
Toppings
- butter, powdered sugar, maple syrup, whipped cream, fruit sauce etc.
Instructions
- Whisk dry ingredients together in a mixing bowl.
- In a separate bowl, mix wet ingredients.
- Combine wet and dry ingredients together. Let batter sit for 5-10 minutes.
- Spray waffle maker with non stick spray and heat up.
- Spoon about ¼ cup of batter into middle of waffle maker and close lid.
- When waffles are done, gently remove from waffle maker (I use a fork) and serve with desired toppings.
