Crispy Gluten-Free Breaded Zucchini chips

A crunchy, golden-brown air fryer zucchini recipe that’s easy, kid-friendly, and naturally gluten-free. A great side dish for any meal, especially paired with baked salmon or a simple protein!

This recipe always makes me laugh—my kids refuse to eat sautéed zucchini or raw zucchini, but the second I coat it in breadcrumbs and air-fry it to crispy perfection, they gobble it up. I keep telling them it’s the same zucchini, but they’re not having it. Hey, whatever works!

Zucchini is one of those veggies that just keeps on giving. Last summer, we had an abundance of it growing in our vegetable garden, and I was constantly finding new ways to use it. (And yes, we happily shared some with the neighbors!)

This air fryer breaded zucchini became a go-to because it’s delicious, easy, and makes good use of our zucchini surplus.

Aside from the prep work, the air fryer does all the heavy lifting. And when I say I let my air fryer do the work, I mean it—I don’t even flip them.

I just pop them in, let them crisp up beautifully, and serve. This is a fantastic side dish to pair with many meals, but since it’s breaded, I like to keep the main protein simple. It’s especially good alongside baked salmon.

Gluten Free Breaded Zucchini Chips in the Air Fryer

Equipment

Ingredients
  

  • 2 large zucchinis , sliced ⅛ to ¼ inch thick
  • 1 egg, beaten
  • 1 cup gluten free bread crumbs
  • ½ cup grated parmesan cheese
  • avocado oil
  • ½ tsp salt

Instructions
 

  • Preheat Air Fryer to 370 degrees.
  • Mix up the bread crumbs and Parmesan on a plate. Dip a zucchini slice into the beaten egg, then into the panko mix—give it a little press to make sure it sticks.
  • Place the breaded zucchini chip aside, either onto a wire baking rack or a parchment lined baking sheet, and keep going with the rest.
  • Give them a light spritz of cooking spray or a drizzle of avocado oil, and bake in the air fryer for 11-12 minutes, until crispy. (see NOTES)

Notes

You will need to work in batches.  Each zucchini chip should be slightly spaced in the air fryer.  Do not overlap or overcrowd.  Overcrowding leads to soggy chips, and those are no bueno.
